We take northern NSW sugar cane molasses, ferment it hot and fast using a proprietary yeast blend. Pot distilled twice, this spirit is dichotomous, with a lighter, more vegetal, agricole style nose, reminiscent of a Haitian Clairin and a rich burnt candy on the palate, more evocative of Jamaican rum.

Makes a funky, verdant Piña Colada for a more elevated take on the tiki classic.
